Editor’s Note: When we make these, we don’t use a binder in the meat as the brand we use doesn’t need it. But if your raw ground beef doesn’t adhere to itself well, mix one raw egg in with the meat before step 3.
Step 1: Cook the Bacon
A bit weird to start with this, but before you do anything else, you need to cook the bacon. While you can throw it on the stove, we actually recommend microwaving your bacon because, for this recipe, the crispier, the better.
We recommend you start preheating your grill at this time as well.
Step 2: Chop
Once the bacon is cooked, set it on your cutting board to cool. In the meantime, slice the mushrooms and onions, and chop the blue cheese if it didn’t come pre-crumbled. When the bacon is cool, chop it as well.
Step 3: Make the Patties
Take your pound of ground beef and divide it into 6 equal balls. Flatten 3 of the balls into patty shapes on your cutting board.
Step 4: Stuff the Burgers
Top these 3 flat patties with blue cheese crumbles and bacon. Don’t be afraid to load them up, as the blue cheese will melt as it cooks! Top with salt and pepper, as well as a drizzle of Worcestershire sauce.
Step 5: Enclose the Burgers
Next, take the 3 remaining balls of ground beef and flatten them into the same size patties as you did for the step above. Press one onto the top of each burger you’ve stuffed. Use your fingers to seal all of the ingredients inside. The result will be a very thick-looking hamburger patty.

Place the thick patties on a sheet of aluminum foil and place them on your grill. Because these patties are stuffed, you don’t want to flip them constantly or baby them. We recommend leaving them for about 5-7 minutes before the first flip.
The cooking time will vary, but we have found these burgers typically reach a nice medium-well temperature in around 15 minutes. You will want to check with a temperature probe to ensure the burgers reach the internal temperature you desire.
Step 7: The Topping
While the burgers are cooking, since you don’t need to baby them, head into the kitchen and saute your mushrooms and onions in a little olive oil on the stove. Set aside.
Step 8: Put it All Together
When the burgers reach near the temperature you want, remove them from the grill. Remember, they will continue to cook as they rest.
Prepare the burgers by placing a thin layer of truffle mayonnaise on the bottom bun (or regular mayo will do!) Then put a small amount of mushrooms and onions on the bottom bun as well.
Gently place the burger on the bun and serve. Ensure napkins are nearby because this dish is a delicious mess!

- You can actually make this dish vegetarian. Replace the ground beef with Beyond Meat minced meat (this is the only brand that adheres well to itself) and the bacon for a tofu bacon alternative. Omit the Worcestershire sauce entirely.
- Kids sometimes have a hard time eating blue cheese, so grab some kid-friendly cheese like mozzarella for them and place a small amount of blue cheese in their burgers and let them fill the rest with mozzarella.

The best way to keep stuffed burgers from falling apart is to cook them on aluminum foil and commit to only planning to flip them one time. You should also use your hands prior to cooking to compress the two halves of the meat together around the stuffing.
