Since cold brisket is easier to work with when trimming, keep it in the fridge until you are ready to prepare it for the smoker.

With the fat cap on the bottom, trim the excess fat and silver skin. Trim the large fat chunk down until the brisket is smooth from point to flat.

How to Make Brisket Tacos

Prepare and Preheat

Preheat your smoker to 225 degrees while you trim your brisket. You should use indirect heat with your favorite hardwood to smoke your brisket.

Season It

Now it’s time to season the brisket. Coat the brisket liberally with yellow mustard and sprinkle the beef seasoning on it so the whole cut is coated.

Smoke It

Once you’ve seasoned the brisket, place it on your smoker with the point towards the heat source.

This is the thicker part of the brisket and will handle the heat better. Cook until it reaches an internal temperature of 165 degrees (roughly 8 hours).

Wrap and Smoke Again

After the initial smoking time, remove the brisket and place it on a flat work surface.
