Whatever the design, a smoker grill combo will have these parts:

  • A firebox
  • The grills or racks
  • The chamber/s
  • Smokestacks or external vents

Basically, everything burns in the firebox. By everything, I mean:

As these things burn, a hole near the firebox allows air to enter. The air directs the smoke into the main chamber. The main chamber is where your racks are.

The heat generated from the firebox creates heat inside the chamber. Aside from heat, smoke will also be in the chamber. Now you can see how the smoker acts as a griller as well.

For both the grilling and smoking function, leave the lid on the smokestack. This will allow the smoke to flavor your meat.

However, you can switch to just the grill function by opening the lid on the smokestack. Doing this allows the smoke to leave the chamber.

I’ve used the Weber Smokey Mountain for years and it always delivers great results. 

And speaking of years, this thing is built like a tank! It’ll last as long as you want to keep it around. 

Typically, you have your food on the top grate, a water pan on the middle grate, and charcoal/wood in the bottom. 

I have found, though, you can use it as a grill if you remove the top grate and put your food directly on that middle grate (instead of the water pan). 

I have gotten the best pure smoking results from this Smokey Mountain than the others listed here, so smoking is it’s definite strength!
