Birria tacos are some of the best tacos out there. While birria is traditionally made from goat or lamb, today, they’re filled with brisket. We’re using leftover brisket that was slow-cooked in our smoker (find the recipe here). The taco is then dipped into a stew and fried for crunchy, savory goodness. There’s some good protein in this recipe and its one of our favorite ways to use leftover brisket.
Ingredients
- 2 ½ cups leftover shredded brisket meat
- 8 small tortillas (corn is best)
- Choice of cooking oil
- 2 ½ cups shredded cheese of choice
- ½ cup chopped cilantro
- Optional additional hot sauce
How To Cook
- Take out some of the broth liquid from the brisket meat, placing it in a bowl. If you didn’t save any, beef broth works for this step as well.
- Put all ingredients on a tray and put it in a practical position for grilling.
- Turn on the Blackstone to medium heat. Cook tortillas if they are uncooked.
- Dip both sides of each tortilla into the drained broth. Spread your cooking oil on the griddle.
- Cook each side of the dipped tortillas for about 30 seconds.
- Place a layer of cheese, brisket, toppings, and additional cheese inside the tortilla. Fold it over into the taco shape and press down.
- Cook 1-2 minutes per side until the cheese is melted and the shell is crispier.

How To Cook
- Preheat the Blackstone Griddle to medium heat.

- Place the sliced onions and peppers on the grill, tossing them around until they are completely coated. Saute the onions until they are cooked to your liking.

- Lift the hoagies and spread mayonnaise on the cooked surface.
- Add the mixture to each bun.

- 4 steaks of choice
